I'm also located in Minnesota. I filed late Jan 2020, Bio in March and got EAD late July, this pieces are handled by NBC. The I-485 at some point was transferred to the field office, they handle the interview scheduling, interview, adjudication etc. Unfortunately for you and I , MN is known to be extremely slow. .
